-
Heat the oven to 200°C / 390°F (180°C / 355°F fan). Boil the penne in salted water for 3 minutes less than the packet says, then drain.
-
Meanwhile, heat the oil in a large pan and brown the sausage coins for 6 minutes. Add the onion and garlic and cook for 4 minutes.
-
Stir in the tomatoes, purée, oregano and salt. Simmer for 8 minutes.
-
Mix in the pasta and tip into a 3 litre baking dish. Cover with foil and bake for 15 minutes.
-
Uncover, scatter with the mozzarella and bake for 10 minutes more until bubbling and golden.
What Can Go Wrong
- Cook the pasta 3 minutes short so it does not turn to mush in the oven.
- If the sauce looks dry going into the dish, add a splash of water.
- Rest the bake for 5 minutes so the sauce settles.
If You're Missing Something
- An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
- Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
About This Recipe
Why does the pasta in a bake always turn soft? It cooks twice: once in the water and again in the oven. The answer is to stop the boiling about 3 minutes early so it finishes in the sauce.
Slice the sausages into coins and brown them first. The fat they leave behind is what the onions soften in, and it gives the whole sauce a savoury base.
A tin of tomatoes and a spoon of purée are enough for the sauce. It should be on the thin side when it goes into the dish, because the pasta soaks up liquid as it bakes.
Cover with foil for the first 15 minutes. The cheese then goes on and the dish browns in the last 10. The bake assembles in advance and goes into the oven when needed, which helps on a busy evening. For a vegetable boost, stir a handful of spinach or frozen peas into the sauce before it is mixed with the pasta.
