How to Cook Shirataki Noodle Stir-Fry

  1. Dry-fry the rinsed noodles in a large non-stick frying pan over medium-high heat for 2 minutes, stirring, until they squeak and the surface looks dry. Tip onto a plate.

  2. Heat 1 tbsp of the oil in the same pan. Cook the tofu for 3 minutes, turning, until golden on most sides. Move to the plate.

  3. Add the remaining oil, the mushrooms and the carrots and stir-fry for 2 minutes. Add the pak choi, garlic and ginger and stir-fry for 1 minute.

  4. Return the noodles and tofu to the pan with the soy sauce and rice vinegar and toss for 1 minute. Off the heat, stir in the sesame oil and scatter with the spring onions and sesame seeds.

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.

A Little Background

Why do shirataki noodles need rinsing and dry-frying before they go near a sauce? They come packed in a liquid with a faint, slightly briny smell, and left wet they dilute everything they touch. Rinse them well. Then cook them in a dry pan for 2 minutes, until they squeak and the surface looks matte.

Shirataki is made from the konjac plant and is almost all water and fibre, which is why it adds so little carbohydrate. It has no flavour of its own. The stir-fry has to supply it. Brown the tofu properly for texture, and keep the vegetables crisp. Ginger, garlic, soy sauce and rice vinegar make a savoury, sharp sauce that the noodles carry well.

Reduced-sodium soy sauce keeps the salt down. Serve at once. The noodles turn slippery as they cool, and toasted sesame seeds add a little crunch. A squeeze of lime at the table brightens the dish. Pak choi stems stay crisp while the leaves wilt.
