Shrimp and Rice Skillet: The Method

Heat the oil in a large, deep frying pan over medium heat. Cook the onion and bell pepper for 4 minutes. Add the garlic, paprika and oregano and cook for 1 minute.

Stir in the rice for 1 minute. Pour in the water, bring to the boil, cover and cook over low heat for 12 minutes.

Lay the shrimp over the rice, cover and cook for 5 minutes, until the shrimp are pink and the rice is tender.

Stand covered for 3 minutes. Stir in the lemon juice, parsley and pepper and serve from the pan.
A Few Pointers
- Use a wide, shallow pan so that the shrimp sit in a single layer.
- Do not lift the lid before the shrimp go in; the steam does the cooking.
- Fluff the rice gently with a fork so that the shrimp stay on top.
Why the Method Is What It Is
It borrows the idea of paella without the stock, the saffron or the salt. Shrimp, white rice, peppers and smoked paprika cook in one wide pan, and the rice drinks up the juices as it softens, so that every grain tastes of the pan. It is dinner in 35 minutes.
Cook the rice first, with the onion, pepper and spices, so that it absorbs the flavour as it softens. Shrimp go on top, for the last 5 minutes, and steam in the heat of the rice. Do not stir after they go in. They cook through without turning rubbery. A wide pan lets them lie in a single layer.
Smoked paprika, garlic and oregano carry the dish. Lemon juice and parsley brighten it at the end. Plain white rice keeps the phosphorus and potassium lower than brown rice would. Check the shrimp label for added phosphate; shrimp without it taste cleaner and cook up plumper. Serve it straight from the pan.

- An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
