Changing the Recipe
- An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
A Little Background
Dried beans are among the cheapest foods in the shop, and the slow cooker removes the one obstacle, which is the long cooking. Seven hours on low turns hard beans into creamy ones, and the broth that results is thick without help.
Soaking is optional. Soaked beans cook a little faster and some cooks find them easier to digest, so rinse and soak overnight if you remember. Otherwise, rinse them and put them in from dry. Do check that the beans are fully tender, since beans that stay slightly firm in the middle are unpleasant, and old beans can take longer.
Bacon gives a smoky base. Fry it with the onion before it goes in, or add it raw for less trouble.
Keep the salt and the tomatoes for the end, if you can. Acid, from tomatoes and vinegar, slows the softening of the skins, so add the tinned tomatoes for the last 2 hours. Mash a few beans against the pot to thicken the soup.
