Behind the Recipe
Minestrone is the soup that uses up the vegetable drawer, and it can change from week to week without ever tasting wrong. What stays the same is the base: onion, carrot and celery, with tomatoes, beans and stock.
The long cooking in a slow cooker softens the vegetables and blends the flavours into a broth with real depth. A rind of parmesan dropped in with the stock adds a savoury background note, and is worth saving for it.
The pasta is the thing to watch. Do not add it at the start. Over 5 hours it would swell to a mush and drink the broth. Stir it in for the last 20 minutes on high, and it cooks to a pleasing bite.
Courgette and green beans go in late too, for the last hour, to keep some colour. Serve with a spoon of pesto stirred in, or grated parmesan. The soup thickens a great deal as it stands, so keep stock or hot water handy.

Ingredient Swaps
- An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
- Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
