-
Heat the oven to 180°C / 355°F. Grease and line three 20 cm tins. Beat the butter and 300 g sugar until pale. Beat in the eggs one at a time, then the vanilla.
-
Mix the flour, baking powder and salt. Fold into the butter mixture alternately with the milk until smooth. Divide the batter into six equal portions.
-
Bake three layers at a time, in the tins, for 10 minutes each until pale gold. Cool on racks, then bake the remaining batter in the same way.
-
For the frosting, boil the 400 g sugar, cocoa, butter and evaporated milk in a saucepan for 5 minutes, stirring. Take off the heat, stir in the vanilla and beat until smooth and spreadable.
-
Stack the layers, spreading each with frosting while it is warm, and finish with the remaining frosting on top and around the sides. Leave to set.

Worth Knowing
- Weigh the batter so that the layers come out the same thickness.
- Keep the frosting warm and spread it fast; it thickens as it cools.
- Cut the cake with a hot, wet knife for neat slices.
Why the Method Is What It Is
Count the layers. A Smith Island cake is made from many thin layers of yellow sponge, here six, each spread with a cooked fudge frosting that is poured on warm and soaks slightly into the cake. The result is tall and striped, and every forkful has more frosting than a conventional cake would give you.
The sponge is a basic butter cake, made in one bowl, and baked in thin layers. It does best in 20 cm tins, with 120 g of batter in each; weigh it to keep the layers even. The layers bake in 10 minutes and need no more than a light golden colour. Overbaking makes them dry and brittle.
Make the frosting while the layers cool and keep it warm. It is sugar, cocoa, butter and evaporated milk, boiled for a few minutes and beaten smooth. Spread it thinly between the layers while it is still pourable, then pile on the rest. It sets as it cools to a fudgy finish that holds the cake together.
