Making Spaghetti Frittata

  1. Whisk the eggs with the parmesan, parsley, pepper and salt. Stir in the spaghetti and leave for 5 minutes.

  2. Heat the oil in a 24 cm non-stick frying pan over medium-low heat. Pour in the mixture and press flat.

  3. Cook for 8 minutes until the base is golden and the top is nearly set.

  4. Slide onto a plate, invert back into the pan and cook for 4 minutes more. Rest for 3 minutes and cut into wedges.
