Put the mayonnaise, ketchup, mustard, pickle relish and pickle brine in a bowl.

Add the sugar, paprika, garlic powder, onion powder and pepper and whisk until smooth and evenly pink.

Taste and adjust, adding a little more relish for sweetness, mustard for tang or brine to loosen it.

Spoon into a jar or squeeze bottle. It can be used straight away, but the flavour is better after 30 minutes in the fridge if you have time.
