How to Make Spiced Roasted Almonds

  1. Heat the oven to 160°C / 320°F (140°C / 285°F fan) and line a baking tray with parchment paper.

  2. Toss the almonds with the oil in a bowl until every nut is lightly coated. Add the paprika, cumin, garlic powder, salt and cayenne and toss again.

  3. Spread the almonds in a single layer on the tray. Roast for 18 to 20 minutes, stirring once halfway, until they smell toasted and have darkened a shade.

  4. Leave the almonds to cool on the tray; they will crisp as they cool.

  • Start with raw almonds, not roasted and salted ones, which would over-roast and over-salt.
  • If you prefer a milder snack, leave out the cayenne.
  • Stir once halfway through so the nuts colour evenly.

How do you get spices to stay on almonds instead of falling to the bottom of the bowl? Use a spoonful of oil as the glue. Toss the nuts in the oil first so every almond is lightly coated, then add the spices and toss again.

Roasting low and slow does the rest. Roast at 160°C for 18 to 20 minutes, stirring halfway, until the almonds smell toasted and turn a shade darker. They will not feel crisp when they come out. Once cool, they firm up, so resist the urge to roast them longer, since over-roasted almonds taste bitter. Cayenne is optional. Check at 15 minutes, since small ovens run hot.
