Making Spinach Lasagna

  1. Heat the oven to 190°C / 375°F. Wilt the spinach in a pan, cool and squeeze very dry. Chop and mix with the ricotta, egg, parmesan, nutmeg, pepper and salt.

  2. Spread a little sauce in a dish. Layer sheets, a third of the filling, sauce and mozzarella. Repeat twice, finishing with sauce and mozzarella.

  3. Cover with foil and cook for 30 minutes. Uncover and cook for 15 minutes more until browned.

  4. Stand for 15 minutes before cutting.

Why the Method Works

A lasagne without meat can feel like a lesser thing, but spinach and ricotta give it its own character: green, creamy, and lighter on the stomach. It also takes half the effort of a meat ragù.

The filling is where care is needed. Wilt the spinach, then squeeze it as dry as you possibly can. Wet spinach is the cause of a watery lasagne, and no amount of baking will rescue it. Mix with ricotta, parmesan, an egg, nutmeg and plenty of pepper.

The tomato sauce can be a jar or a quick simmer of tinned tomatoes with garlic, which takes 15 minutes.

Layer sauce, pasta, filling and mozzarella three times, finishing with sauce and cheese. Cover with foil and cook at 190°C for 30 minutes, then uncover and cook for 15 minutes more, until browned. If your oven runs hot, check at 38 minutes. Stand for 15 minutes before cutting, which firms the layers.
