How to Make Spritz Cookies

Heat the oven to 175°C / 350°F (155°C / 310°F fan). Use cold, ungreased baking trays with no parchment.

Beat the butter with the sugar for 3 minutes, until pale and fluffy. Beat in the egg, vanilla and almond extract, then stir in the flour and salt to make a soft dough that is not sticky.

Pack the dough into a cookie press fitted with a disc of your choice. Press the cookies onto the cold trays, about 3 cm apart, lifting the press straight up after each one. Decorate with the sprinkles, if using.

Bake for 8 to 10 minutes, until the edges are just golden. Cool on the trays for 2 minutes, then move to a wire rack to cool completely.
