Behind the Recipe
A pasty is a pie you can hold, which is why miners took them down the pit. The steak and cheese version is richer than the classic and fills a hungry person up.
Chop the beef small, about 1 cm, so it cooks tender in the time the pastry takes. Mix it raw with diced potato, onion, a little flour and plenty of pepper, and add the cheddar last. Season the filling well: the pastry is plain, and the filling cooks inside, where you cannot taste it.
Cut 4 circles about 20 cm across from the pastry. Pile the filling down the middle, brush the edge with egg and fold over. Crimp the edges tightly with a rolling twist and cut a slit in the top.
Brush with egg and cook at 200°C for 15 minutes, then reduce to 170°C for 25 minutes. If your oven runs hot, check at 35 minutes. Rest for 10 minutes. The filling is very hot.
