Take the steaks out of the fridge 20 minutes before cooking. Pat them dry and season generously on both sides with salt and pepper.

Bring a pan of salted water to the boil and blanch the asparagus for 2 minutes. Drain, and refresh under cold running water. Set aside.

Heat the oil in a heavy frying pan over high heat until it smokes lightly. Sear the steaks for 3 minutes on one side, turn, add the 15 g of butter and cook for 3 minutes more for medium-rare, or 5 minutes for medium, spooning the melted butter over them. Rest on a warm plate for 5 minutes.

For the hollandaise, put the egg yolks, the tablespoon of lemon juice and the water in a heatproof bowl set over a pan of barely simmering water. Whisk for 3 to 4 minutes, until pale, thick and doubled in volume. Remove the bowl from the heat and whisk in the warm melted butter in a slow stream until the sauce is thick and glossy. Season with salt and cayenne.

Melt the 20 g of butter in a small pan over low heat, add the crab and the teaspoon of lemon juice and warm through for 1 minute. Reheat the asparagus for 30 seconds in the same pan.

Set each steak on a warm plate and cross 4 asparagus spears over it. Top with the crab, spoon over the hollandaise and serve at once.

- Pat the steaks dry, and get the pan very hot. A dry surface and a hot pan give the brown crust, and a wet steak simply steams.
- If the hollandaise thickens too fast or looks grainy, take it off the heat and whisk in a teaspoon of cold water. It comes back together easily.
- Buy fresh or pasteurised white crab meat, not brown, and check it for shell. Warm it very gently, as it toughens quickly.
