Why the Method Is What It Is
Mash the strawberries with sugar and leave them for a few minutes. That is the quick tip for this ice cream, and it makes the fruit taste of more.
There is no machine and no custard. Whipped cream supplies the air that a churn would, and condensed milk supplies the sweetness and keeps the ice cream soft when frozen. Whip the cream to stiff peaks before anything else goes in. Soft cream collapses when the fruit is folded in, and the ice cream freezes to a solid block.
Crush the strawberries to a rough puree and drain off a little of the juice, since too much liquid freezes into ice crystals. Fold the puree and the condensed milk gently into the cream, keeping as much air in as you can.
Spoon into a loaf tin, cover and freeze for 6 hours. Take it out of the freezer 10 minutes before scooping. The ice cream is soft and creamy, not rock hard, and keeps for a month.
