-
Heat the oven to 175°C / 350°F (155°C / 310°F fan). Mix the pretzels, melted butter and 3 tbsp sugar, and press the mixture firmly into the base of a 23 x 33 cm dish. Bake for 8 minutes, then cool completely.
-
Beat the cream cheese with the 100 g sugar until smooth. Whip the cream to stiff peaks in a separate bowl and fold it into the cream cheese mixture.
-
Spread the cream layer over the cooled crust, taking it right to the edges of the dish to seal the crust.
-
Stir the jelly crystals into the boiling water for 2 minutes, until completely dissolved. Leave to cool for 20 minutes, until syrupy but still liquid, then stir in the strawberries.
-
Pour the jelly slowly over the cream layer, over the back of a spoon so that it does not break the surface. Refrigerate for at least 4 hours, until the jelly is firmly set, then cut into squares.
A Few Pointers
- Cool the crust completely before you add the cream layer. A warm crust melts the cream cheese and the layers run together.
- Spread the cream layer right up to the sides of the dish. It is a seal, and without it the jelly leaks under the filling and softens the pretzels.
- Let the jelly cool until it is syrupy before you pour it. If it goes on hot, it melts holes in the cream layer.
Some Background
Strawberry pretzel salad is not a salad in the usual sense. It belongs to the American tradition of the jelly salad, in which the word covers any sweet or savoury dish that is set in gelatin and served in a dish at a potluck, and it is one of the best loved of them. It has three layers. The base is a crust of crushed salted pretzels, mixed with melted butter and sugar and baked for a few minutes until it is crisp. On top of that goes a soft layer of cream cheese, sugar and whipped cream, and it is spread right to the edges of the dish to seal the crust. The top is strawberry jelly with strawberries set in it. The result is a combination of textures and tastes that is sweet, salty, creamy, crunchy and fruity all at once, and the salty crust is the surprise that makes it work. The dessert has been a favourite at church suppers, family gatherings, Easter and Fourth of July tables across the Midwest and the South for decades. The important part is the seal. If the cream layer does not reach every edge of the dish, the liquid jelly runs down between the filling and the crust and makes the pretzels soggy. Cool the jelly until it is syrupy, and pour it slowly over the back of a spoon. Then let the dessert chill for at least four hours, until it is firm enough to cut into clean squares.

Ingredient Swaps
- Double cream won't whip if you swap it, but for the cooking itself, full-fat crème fraîche or a lower-fat single cream works in its place.
