Making Stuffed Onions, Step by Step

Heat the oven to 190°C / 375°F (170°C / 340°F fan). Peel the onions, trim the bases so they stand, and boil in salted water for 10 minutes. Drain and cool.

Cut a slice off the top of each and scoop out the centres, leaving two outer layers. Chop the scooped onion finely.

Mix the sausage meat, breadcrumbs, chopped onion, sage, salt, pepper and egg. Pack into the onion shells, mounding the tops.

Stand them in a snug dish, pour in the stock and dot with the butter. Cover with foil and bake for 30 minutes, then uncover and bake for 25 minutes more until browned and cooked through.
