How to Make Stuffed Pepper Soup

  1. Heat the oil in a large, heavy pot over medium-high heat. Add the mince and cook for 6 minutes, breaking it up, until browned.

  2. Add the onion and peppers and cook for 5 minutes, until softened. Stir in the garlic and tomato paste and cook for 1 minute.

  3. Add the tomatoes, stock, paprika, oregano, basil, bay leaf, salt and pepper. Bring to the boil, then reduce the heat and simmer for 15 minutes.

  4. Stir in the rice and simmer, partly covered, for 15 to 18 minutes, until the rice is tender and the soup is thick.

  5. Remove the bay leaf. Taste and adjust the seasoning, then ladle into bowls and scatter with parsley.
