Succotash

  1. Melt the butter in a large frying pan over medium heat. Cook the onion and red pepper for 5 minutes, until softened. Add the garlic and cook for 1 minute.

  2. Add the lima beans, sweetcorn, thyme and stock. Bring to a simmer, cover and cook for 8 to 10 minutes, until the beans are tender.

  3. Remove the lid, stir in the cream and simmer for 2 minutes, until slightly thickened.

  4. Season with the salt and pepper, stir in the parsley and serve hot.
