Tajine Tunisien
Nothing like a Moroccan tagine: this is a baked omelette thick with chicken, cheese and parsley, cut into squares and eaten cold as often as hot.

Method

Fry the onion in 3 tbsp oil for 6 minutes, add the diced chicken and cook 12 minutes over medium-high heat until browned and the pan is completely dry.

Stir in the harissa, turmeric, salt and pepper and cook 1 minute. Spread on a plate and cool.

Heat the oven to 180°C / 350°F and oil a 25 cm square tin generously.

Beat the eggs, then stir in the grated cheese, breadcrumbs and parsley.

Fold the cooled chicken mixture through.

Pour into the tin and level the top.

Bake 45 minutes, until risen, deep gold and completely firm to the touch in the centre. Cool at least 20 minutes before cutting into squares.
