Heat the oven to 220°C / 430°F. Dry the wings, toss with the salt and spread on a lined tray. Bake for 25 minutes.

Meanwhile simmer the soy sauce, honey, mirin, ginger, garlic and sesame oil for 4 minutes until it coats a spoon.

Brush the wings with the sauce and bake for 7 minutes. Brush again and bake for 8 minutes more.

Scatter with the sesame seeds and spring onions and serve hot.
