The Short Version
Dip the biscuits for one second only. That is the advice that decides whether a tiramisu is light or a puddle, and it applies to the strawberry version just as it does to the coffee one. Tiramisu alle fragole swaps the coffee for orange juice and puts sliced strawberries between the layers.
Whisk the mascarpone with the sugar and cream until it holds soft peaks. Do not beat it hard, as mascarpone turns grainy and then curdles if overworked. Hull the strawberries and slice them thin, saving a few whole ones for the top. Dip the sponge fingers in the orange juice, flip them over, and lay them side by side in the dish.
Spread half the cream over the biscuits, cover with a layer of sliced strawberries, then repeat with the rest. Cover and chill for at least 6 hours so the biscuits soften into a sponge and the layers set. Decorate with the whole strawberries and a few mint leaves before serving, since they bleed if left on too long.
