Press the tofu. It is the one step that decides this bowl. Tofu straight from the pack is wet, and wet tofu never crisps; 15 minutes under a weight and a towel turns it into something that browns, holds a marinade and eats like a food in its own right.

Pan-fry the cubes until golden on three sides, then toss them with rice vinegar, low-sodium soy sauce and ginger for the last minute. Keep the vegetables raw and cold: cucumber, red cabbage, carrot and spring onion. Hot tofu, cold vegetables: that is the bowl. The cold vegetables also keep the plate light in sodium, since they need no seasoning at all.

  1. Wrap the tofu in a clean tea towel, set a plate and a heavy tin on top and press for 15 minutes. Cut it into 2 cm cubes.

  2. Meanwhile, put the rice and water in a saucepan, bring to the boil, cover and cook over low heat for 15 minutes. Stand covered for 5 minutes, then fluff.

  3. Heat the oil in a large non-stick frying pan over medium-high heat. Fry the tofu for 7 minutes, turning, until golden on three sides. Add the ginger, vinegar and soy sauce and toss for 1 minute.

  4. Divide the rice between three bowls. Top with the tofu, cucumber, cabbage, carrot and spring onions and drizzle with the sesame oil.
