Tomato Sandwich
Thick slices of ripe summer tomato, salted and peppered, between soft white bread spread generously with mayonnaise. Simple, and a Southern summer ritual.

Cut the tomatoes into slices about 1 cm thick, discarding the ends. Lay the slices on a double layer of kitchen paper and sprinkle lightly with half of the salt. Leave them for 5 minutes to draw out some of the juice.

Spread the mayonnaise on one side of each slice of bread, right to the edges.

Blot the tomato slices lightly with kitchen paper and arrange them in a single layer, slightly overlapping, on two of the slices of bread.

Season with the rest of the salt and plenty of black pepper, then top with the remaining slices of bread, mayonnaise side down.

Press down gently, cut in half and eat at once, before the bread turns soft.
