  1. Blend the basil, pine nuts, garlic, cheeses and salt, adding the oil in a thin stream, to a rough paste.

  2. Boil the potatoes in a large pan of salted water for 5 minutes. Add the beans and boil for 3 minutes more.

  3. Add the pasta and cook until tender, about 8 minutes. Keep 150 ml of the water, then drain.

  4. Toss everything with the pesto and enough of the water to make it creamy.

Things to Watch For

  1. Never heat the pesto.
  2. Cook the potatoes and beans in the same water.
  3. Add pasta water to loosen the sauce.

Common Substitutions & Variations

  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.

About This Recipe

It looks like a bowl of green pasta and eats like a lesson in how to make pesto. Trenette al pesto comes from Liguria, where the sauce is served with flat ribbon pasta, small potatoes and green beans, all cooked in the same pot.

The pesto is raw, so it must not be heated. Pound or blend the basil with pine nuts, garlic, Parmesan, pecorino and olive oil, adding the oil last and slowly. Keep the basil leaves dry and the blender cool, because heat and bruising turn the sauce dark. A few ice cubes in the blender help in summer.

Boil the potato cubes first for 5 minutes, add the green beans, then the pasta. Everything is done in about 10 more minutes. Drain, keeping a cup of the water, and toss with the pesto and a splash of water until it coats. The potatoes break up a little and turn the sauce creamy. Serve at once.
