Heat the oven to 200°C / 390°F (180°C / 355°F fan). Prick the potatoes, rub with the oil and salt and bake directly on the shelf for 1 hour until the skin is crisp and a knife slides in.

Mix the tuna, sweetcorn, mayonnaise and spring onions.

Split each potato lengthways, fluff the flesh with a fork and add the butter.

Pile in the tuna mixture, top with the cheese and return to the oven for 5 minutes until melted.
