  1. Rinse the rice until the water runs nearly clear. Put it in a pan with the water, bring to a boil, cover and cook on the lowest heat for 12 minutes. Leave covered for 10 minutes.

  2. Mix the tuna with the mayonnaise, 1 teaspoon of soy sauce and the sugar.

  3. Fry the eggs in the oil in a hot pan with a lid for 2 minutes.

  4. Divide the rice between two bowls, top with the tuna, cucumber and egg. Drizzle with the remaining soy sauce and scatter with the sesame seeds.

What Can Go Wrong

  1. Let the rice stand, covered, after cooking; it finishes steaming and loses its stickiness.
  2. Drain the tuna very well or the topping goes watery.
  3. Add a squeeze of lime for a sharper bowl.

About This Recipe

The rice is the base, so get it right. Rinse it until the water runs nearly clear, cook it in a measured amount of water, and let it stand covered for 10 minutes after the heat goes off. That is how it comes out fluffy.

The tuna topping takes no cooking. Drain a tin, mix with mayonnaise, soy sauce and a pinch of sugar, and it tastes like the filling at a sushi counter.

Cucumber cut thin adds crunch against the soft rice, and the fried egg gives the bowl a sauce of its own.

Keep the yolk runny. Two minutes in a hot, oiled pan with a lid on is enough, and the yolk then runs into the rice. The bowl is open to whatever is in the fridge: sliced avocado, grated carrot or a few leaves of lettuce all work. Keep the rice warm and the topping cool, since the contrast is what makes the bowl pleasant to eat.

To Go With It

Pickled ginger · Miso soup · Seaweed snacks · Chili sauce

Leftovers

Best eaten straight away. Keep the tuna mixture in the fridge for up to 1 day. Cool the rice quickly and eat within a day.
