Why It Works

It looks like a pink soft drink and tastes like the fruit itself, which is why the choice of melon matters more than anything else. A ripe one is heavy for its size, with a yellow patch where it lay on the ground and a hollow sound when tapped.

Cut the flesh into chunks and take out the seeds if you can, though they strain out anyway. Blend for 30 seconds until completely liquid, then pour through a sieve into a jug, pressing with a spoon. Straining is optional, but it gives a clear juice instead of a pulpy one. Add a pinch of salt. It sounds odd, and it makes the sweetness taste brighter.

Stir in the lime juice and taste. Add a spoonful of sugar only if the melon was not very sweet.

Serve over ice with a mint leaf, and drink within a few hours, because the juice separates and loses its freshness.

Leftovers, Reheating and Keeping

Best drunk within a few hours. Keeps in the fridge for 1 day; stir before pouring.
