  1. If you are using the egg white, put the bourbon, lemon juice, sugar syrup and egg white in a cocktail shaker without ice and shake hard for 10 seconds.

  2. Fill the shaker two-thirds with ice and shake hard for 12 to 15 seconds, until the shaker is painfully cold. If you are not using egg white, put the bourbon, lemon juice and syrup in with the ice at this point.

  3. Strain over fresh ice in a rocks glass.

  4. Garnish with the orange slice and the cherry.

Chef’s Tips

  • Use fresh lemon juice. Bottled juice is flat, and a sour is nothing but lemon and sugar.
  • Shake once without ice if you use egg white. Without ice the white whips properly, and the drink gets its foam.
  • Taste and adjust. Add a teaspoon more syrup if your lemons are very sharp.

Pairing Suggestions

  • Barbecued ribs
  • Salted nuts
  • Burgers

Storage & Reheating

Made to order. Lemon juice loses its aroma within an hour, so squeeze it just before you shake. Do not keep a drink made with egg white.
