Mix the flour, yeast and salt in a large bowl. Add the oil and water and mix to a soft dough.

Knead for 10 minutes until smooth and elastic. Put in an oiled bowl, cover and prove for 1 hour until doubled.

Knock back, shape into a loaf and put in a greased 900 g tin. Cover and prove for 30 minutes until it rises above the rim.

Heat the oven to 220°C / 430°F (200°C / 390°F fan). Bake for 35 minutes until deep golden and hollow when tapped underneath. Cool on a rack.

Use strong bread flour, which has more gluten than plain, and so makes a springier crumb. Measure the water carefully: too much makes a slack, flat loaf.

Prove until doubled, not for a set time. A warm kitchen takes 45 minutes; a cold one, nearly 2 hours. Poke it gently: if the dent springs back slowly, it is ready.
