  1. Stir the yoghurt with the honey and vanilla in a bowl until smooth.

  2. Mix the berries gently in a bowl and set aside a small handful of the best for the top.

  3. Spoon a quarter of the yoghurt into the base of each of 2 tall glasses, then add a spoonful of granola and a layer of berries.

  4. Repeat with the remaining yoghurt, granola and berries, so that each glass has two layers of each.

  5. Finish with the reserved berries and a last sprinkle of granola, and add a mint leaf if you like. Serve at once.

Tips for Making Yogurt Parfait

  • Use thick, strained Greek yoghurt. Thin yoghurt runs into the berries and makes the granola soggy.
  • Put the granola in at the last minute if you are making the parfaits ahead. It stays crisp for a few hours only, and longer if it is on top.
  • Taste the yoghurt before you layer it. Tart yoghurts and sharp berries may need another spoonful of honey.

What to Serve with Yogurt Parfait

  • A cup of coffee
  • Freshly squeezed orange juice
  • A boiled egg

Storing & Reheating Yogurt Parfait

Best eaten straight away. The yoghurt and berries can be layered in a jar and kept in the fridge for up to 1 day, keeping the granola separate to stay crisp.
