  1. Heat the air fryer to 200°C / 400°F for 3 minutes.

  2. Toss the sprouts with the oil, salt and pepper until glossy.

  3. Tip into the basket, cut side down where you can, in a single layer or a shallow pile.

  4. Cook 12 to 15 minutes, shaking the basket at 6 minutes, until the outer leaves are dark and crisp and a knife slides into the core.

  5. Toss the hot sprouts in a bowl with the balsamic, maple syrup and lemon juice.

  6. Serve straight away while the leaves are crisp.
