-
Mix the butter, garlic, thyme, sage, salt and pepper. Loosen the skin of the turkey and spread half of the butter underneath. Rub the rest over the top.
-
Heat the air fryer to 170°C / 340°F. Brush the basket with the olive oil.
-
Place the turkey skin side up in the basket. Cover loosely with foil and cook for 30 minutes.
-
Remove the foil and cook for 20 minutes more, until the skin is golden and a thermometer in the thickest part reads 71°C / 160°F.
-
Rest under foil for 15 minutes, then slice against the grain.
A Few Notes
Use a thermometer: 71°C / 160°F in the thickest part is cooked.
If the skin browns too fast, tent it with foil again.
Slice across the grain for tender portions.
If You're Missing Something
- An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
Storing and Reheating
Keeps for 3 days in the fridge. Slice before storing and reheat gently with a splash of stock.
