-
Heat the oven to 190°C / 375°F. Boil the spaghetti in salted water for 2 minutes less than the pack says. Drain.
-
Melt the butter in a large pan and cook the mushrooms and onion for 8 minutes. Add the garlic for 1 minute and stir in the flour for 1 minute.
-
Add the stock gradually, whisking, then the cream and sherry. Simmer for 5 minutes. Season with the salt and pepper.
-
Mix in the turkey and spaghetti and pour into a baking dish. Scatter with the parmesan and breadcrumbs.
-
Bake for 30 minutes until golden and bubbling. Rest for 5 minutes.

A Few Notes
Use dry sherry, not cooking sherry.
Cook the pasta short as it finishes in the oven.
Rest before serving.
Changing the Recipe
- In a sauce, full-fat crème fraîche can usually take the place of the double cream; single cream is thinner and more likely to split if it boils, so keep it below a simmer.
- An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
Leftovers
Keeps for 4 days in the fridge or 2 months in the freezer.
The Numbers per Serving
Per serving, calculated from the ingredient list with USDA FoodData Central figures (SR Legacy). A calculation, not a laboratory analysis: brands, cuts and how you measure change the real numbers. The calories include 1 g of alcohol a serving, which is not part of the protein, carbohydrate or fat. How the figures are worked out.
