Almond Tofu

A set almond cream cut into cubes and floated in syrup with fruit. Not tofu and not really almond — it is apricot kernel, and it tastes of neither.

  1. Whisk the agar powder into the almond milk while it is cold, so it disperses without lumps.

  2. Add the whole milk, sugar and salt and bring to the boil, whisking.

  3. Boil 2 full minutes, whisking constantly — agar must boil or it will not set.

  4. Take it off the heat, stir in the almond extract, and pour into a shallow dish through a sieve.

  5. Leave to set at room temperature 30 minutes, then refrigerate 2 hours until firm.

  6. Simmer the syrup water, sugar and lemon peel together 5 minutes, then chill it.

  7. Cut the set jelly into 2 cm cubes or diamonds with a wet knife.

  8. Divide between bowls, add the fruit, and pour the cold syrup over.
