Put the ingredients on a stick and everything is a mouthful. That is the whole idea behind this party plate, and why it saves you from a cheese board and a lot of plates.

Thread the pieces in an order that looks good and eats well: a slice of folded salami, a mozzarella ball, an olive, an artichoke heart, a piece of roasted pepper. Alternate colours so that the skewer looks bright. Pat the artichokes, peppers and olives dry before threading. The brine in the jar makes the other items soggy and slippery.

Make the skewers up to 3 hours ahead and keep them covered in the fridge. Drizzle with the oil and balsamic vinegar only just before serving, so that the colours stay clean. A pinch of dried oregano and a few torn basil leaves finish them.

Serve on a long board or platter. Use short wooden skewers or cocktail sticks for smaller bites. If you are feeding a crowd, double the quantities and use a bigger board.

How to Make Antipasto Skewers

  1. Pat the artichokes, peppers and olives dry. Fold the salami slices.

  2. Thread the salami, mozzarella, olives, artichoke and pepper onto 8 skewers, alternating colours.

  3. Arrange on a platter. Just before serving, drizzle with the oil and balsamic vinegar and scatter with the oregano.

Worth Getting Right

  • Pat the jarred items dry.
  • Alternate the colours.
  • Dress just before serving.
  • Make up to 3 hours ahead.

Changing the Recipe

  • Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
