Cooking Baked Tofu Cubes

  1. Heat the oven to 220°C / 430°F (200°C / 390°F fan) and line a large baking tray with parchment paper. Press the tofu for 10 minutes between paper towels under a heavy pan, then cut it into cubes.

  2. Toss the cubes gently with the cornflour, sunflower oil and pepper, and spread them in a single layer on the tray with space between them.

  3. Bake for 25 minutes, turning once halfway, until golden and crisp at the edges.

  4. Whisk the soy sauce, rice vinegar, garlic, ginger and sesame oil together, pour over the hot tofu and toss. Bake for 5 minutes more. Scatter with the spring onion and sesame seeds.

Why It Works

A Sunday batch for the week ahead: crisp-edged tofu cubes that go into salads, grain bowls and lunch boxes. They bake rather than fry, so they need a single spoonful of oil, and a dusting of cornflour gives the outside its crust. Cook once, eat for days.

Water is the enemy of crisp tofu. Press it for 10 minutes between paper towels under something heavy; the drier it is, the better it crisps. Cut it into cubes of even size so they cook together, and give them space on the tray, since crowded cubes steam. Turn them once, and expect the edges to colour before the centres do.

The sauce goes on at the end. Toss the cubes in soy, ginger and garlic for the last 5 minutes only, so the coating sets on the surface without burning. Reduced-sodium soy sauce keeps the salt in check. Leftover cubes are good cold in a salad or wrap.
