Heat the oven to 220°C / 430°F (200°C / 390°F fan). Toss the mushrooms with the oil, salt and pepper on a large baking tray and spread them in a single layer. Roast for 15 minutes.

Stir in the balsamic vinegar, garlic and thyme and roast for 8 to 10 minutes more, until the liquid has been absorbed and the mushrooms are deep brown.
