  1. Heat the oven to 220°C / 430°F (200°C / 390°F fan). Spread the asparagus on a large baking tray in a single layer.

  2. Drizzle with the oil, season with the salt and pepper and toss with your hands to coat.

  3. Roast for 10 minutes, until the spears are tender and the tips are lightly charred. Scatter with the garlic and Parmesan and roast for 2 minutes more, until the cheese melts and begins to crisp.

  4. Finish with the lemon zest and juice and serve straight away.

What's Going On Here

The usual way roasted asparagus goes wrong is a limp, grey spear, and the cause is heat that is too low or a tray that is too crowded. A hot oven, a single layer and about 12 minutes keep the spears bright and tender, with a little char at the tips. Thickness decides the time.

Snap off the woody ends, or trim them with a knife where the spear starts to feel tender. Toss the spears with oil on the tray itself, so there is nothing extra to wash. Add the Parmesan at the end, for the last 2 minutes, so it melts and crisps instead of burning. Salt lightly, because the cheese is salty.

Garlic goes in with the cheese for the same reason: minced garlic scorches if it roasts for the whole time. Lemon zest and juice finish it. Serve straight from the oven as a side for fish, chicken or eggs.
