  1. For the stew, heat the oil and cook the onion for 5 minutes. Add the tomatoes and chilli and cook for 10 minutes.

  2. Add the okra, smoked fish, salt and water and simmer for 12 minutes. Add the prawns for the last 4 minutes.

  3. For the banku, whisk the corn flour, cassava flour, yoghurt, salt and cold water until smooth. Cook over a low heat, stirring constantly, for 5 minutes until it thickens.

  4. Beat the dough against the side of the pot with a wooden spoon for 10 minutes, adding a splash of hot water if it becomes too stiff, until smooth and stretchy.

  5. Shape into balls with a wet spoon and serve with the okra stew.

What's Going On Here

Banku is made by stirring, and the stirring takes arm strength. A mixture of corn flour and cassava flour is cooked with water in a heavy pot, and as it thickens, it has to be beaten against the side with a wooden spoon, folded and beaten again until it is smooth, stretchy and shiny. The work takes 15 minutes and gives the dough its unique springy texture.

Traditionally the dough is made from fermented corn and cassava dough, which gives a light tang. A good shortcut is to use fine corn flour and cassava flour, with a spoonful of plain yoghurt or lemon juice to add some sourness. Mix the flours with cold water first, to a smooth batter. Then cook it on a low heat, stirring.

The stew is simple and quick. Okra is sliced and cooked with onion, tomato, scotch bonnet and a little palm oil. It becomes slimy by design: the sticky okra is what makes it a dipping sauce. Smoked fish or prawns add a deep flavour.

Shape the banku into balls with a wet spoon, and serve in a bowl with the stew. Eat with the fingers: pinch off a piece, dip, and swallow.

Storage and Reheating

Best eaten straight away. The stew keeps in the fridge for 2 days.

Ingredient Swaps

  • Dried chilli flakes can stand in for the chilli. Heat varies a great deal between chillies and between jars, so start with a small pinch and add more to taste.
