Method

  1. Put the black-eyed peas and water in a large pot, bring to a boil and simmer for 40 to 50 minutes, until soft. Do not drain.

  2. Heat the palm oil in a large pan over medium heat and cook the onion for 5 minutes, until soft. Add the ginger and cook for 1 minute.

  3. Add the tomatoes and tomato paste and cook for 10 minutes, until the tomatoes have broken down and the oil has separated.

  4. Stir the sauce into the peas with their cooking water, add the scotch bonnet and salt and simmer for 15 minutes, until thick. Remove the chilli.

  5. Heat 1 cm of oil in a frying pan over medium heat and fry the plantain slices for 2 minutes per side, until deep golden and caramelised. Drain.

  6. Serve the beans in bowls with the fried plantain alongside.
