Bannock

A plain quick bread of flour, fat and baking powder, fried in a cast-iron pan until golden. Made by Indigenous cooks across Canada, and eaten with jam or honey.

Method

  1. Mix the flour, baking powder, salt and sugar in a bowl. Rub in the shortening with your fingertips until the mixture looks like coarse crumbs.

  2. Add the water and stir with a fork until a soft dough forms. Do not overwork it.

  3. Turn onto a floured surface, knead 5 or 6 times, then pat into a round 2 cm thick. Cut into 6 wedges.

  4. Heat the oil in a large cast-iron or heavy frying pan over medium-low heat. Fry the wedges for 6 to 8 minutes per side, until deep golden and cooked through in the middle.

  5. Drain briefly and eat warm.
