Good to Know About Beet Salad with Orange
What do beetroot and orange have in common? Sweetness, and a bright colour. The orange also cuts through the earthy taste of the root.
Use cooked beetroot from a vacuum pack, or boil your own and cool them. Slice them 5 mm thick and lay them in overlapping circles on a platter. The orange needs to be peeled and segmented, which means cutting off the peel and the white pith with a knife, then cutting between the membranes to release each piece. Catch the juice that runs out. It goes into the dressing.
Whisk the juice with the olive oil, vinegar and honey. Pour half over the beetroot and leave for 5 minutes, so that the beetroot takes up the flavour. Tuck the orange segments and rocket in among the slices.
Crumble the goat cheese over the top and add the remaining dressing just before serving. Beetroot stains, so use a plate with a pale background and wash your hands with cold water. The salad is better cool than ice-cold.
