  1. Mix the celery salt and pepper on a small plate. Run a lime wedge around the rim of a tall glass and dip the rim into the salt.

  2. Fill the glass with ice.

  3. Add the vodka, Clamato, Worcestershire sauce, hot sauce and horseradish, and squeeze in the juice of a lime wedge.

  4. Stir gently for 10 seconds.

  5. Garnish with the celery stick, a lime wedge and the pickled bean.

Chef’s Tips

  • Chill the Clamato and the glass beforehand. A warm drink melts the ice and turns thin.
  • Add the hot sauce in dashes and taste. The Clamato is already salty and mildly spiced.
  • For a drink without alcohol, leave out the vodka and add a splash of lime juice.

Common Substitutions & Variations

  • Lemon is the everyday swap for lime in this kind of dish — the acidity plays the same role even though the flavour is not identical.

Pairing Suggestions

  • Eggs Benedict
  • Peameal bacon sandwich
  • Oysters

Storage & Reheating

Make to order. Mix a jug of the Clamato, Worcestershire, hot sauce and horseradish up to 1 day ahead in the fridge and add vodka and ice at the glass.
