  1. Heat the oven to 160°C / 320°F (140°C / 285°F fan). Rub the pork with the salt and pepper.

  2. Heat the oil in a heavy casserole over medium-high heat. Sear the pork for 4 minutes per side until deeply browned, then lift it out.

  3. Add the onions, apples and garlic and cook for 5 minutes. Pour in the stock and vinegar, scraping up the browned bits, and add the bay leaves.

  4. Return the pork, cover tightly and cook in the oven for 3 hours, until a fork slides in and twists easily.

  5. Rest for 15 minutes, then shred the meat and moisten it with the cooking juices.
