- Cook the chops to 63°C / 145°F and rest.
The Short Version
This is what to make in the first cold week of autumn, when apples are crisp and the oven starts to feel like a friend. Pork and apple is one of the oldest pairings in European cooking, and roasting the two together on a tray makes the fruit soften and caramelise in the pork fat.
The sweet potato is cut small, about 2 cm, so that it is done in the same time as the chops. Larger chunks stay hard. Toss it with oil and salt and give it a 10 minute head start in a hot oven, then add the chops, apples and onion. Choose firm apples that keep their shape, such as Braeburn or Cox.
Rub the chops with mustard and thyme, not just salt. Wholegrain mustard forms a lightly sharp crust that browns well in the oven, and the thyme gives an herbal, savoury note. Chops 2.5 cm thick take about 20 minutes at 210°C / 410°F, so they stay juicy.
Pull the chops at 63°C / 145°F and rest them on the tray for 5 minutes while the vegetables finish. Spoon the roasted apple and onion over the pork, and drizzle with the juices left on the tray.
