Spread the filling on 4 slices of bread, top with the other 4 and cut each into 2 triangles.
-
Whisk the gram flour, turmeric, chilli powder and remaining salt with the water into a thick batter.
-
Heat the oil in a deep pan. Dip the triangles in the batter, lift out and fry in batches for 3 minutes, turning once, until golden. Drain on kitchen paper.

Notes From the Method
Keep the batter thick enough to cling.
Dip the bread for a second only.
Fry in small batches to hold the oil temperature.
Serve while hot and crisp.
Ingredient Swaps
- Dried chilli flakes can stand in for the green chilli. Heat varies a great deal between chillies and between jars, so start with a small pinch and add more to taste.
Leftovers
Best eaten straight away. Reheat in a hot oven to crisp them again.
