Eggs, chorizo, tortillas, cheese: four things, ten minutes of cooking, and a breakfast that feels more like a party. The order of cooking is what matters.
Fry the chorizo first, in a dry pan, for 4 minutes. It releases a red oil that you should leave in the pan, because the eggs cook in it and take on its colour and spice. Do not add butter. The chorizo has provided all the fat you need.
Turn the heat down before the eggs go in. Stir them slowly with a spatula until they form soft curds and still look slightly wet, about 3 minutes. They keep cooking on the plate.
Warm the tortillas in a dry pan for 20 seconds a side, fill with egg, cheddar, sliced avocado and salsa and fold. Wrap them in a clean cloth if you are cooking in batches, so that they stay soft. A squeeze of lime over the top just before eating lifts the whole filling.
