  1. Heat the oven to 175°C / 350°F. Line a 20 cm square tin with parchment paper, leaving an overhang on two sides.

  2. Mix the flour, sugar and salt for the base. Rub in the butter until the mixture looks like damp sand and holds together when pressed. Press it firmly and evenly into the tin.

  3. Bake the base for 18 minutes, until pale golden. Take it out and leave the oven on.

  4. Whisk the eggs in a bowl, then whisk in the brown sugar, melted butter, syrup, vanilla, flour and vinegar until smooth. Stir in the raisins and pecans, if using.

  5. Pour the filling over the warm base. Bake for 25 minutes, until the top is golden and set at the edges with a slight wobble in the centre.

  6. Cool completely in the tin, at least 1 hour, then lift out by the paper and cut into 16 bars.
