Cheese and Bacon Rolls

  1. Cook the bacon in a frying pan over medium heat for 6 to 8 minutes until crisp. Drain on paper towels and let it cool.

  2. Mix the flour, yeast, salt and sugar in a large bowl, add the milk and melted butter and stir into a shaggy dough. Knead 8 to 10 minutes until smooth and elastic.

  3. Cover and leave to rise for 1 hour, until doubled.

  4. Roll the dough into a rectangle about 30 x 40 cm. Scatter over the bacon, cheddar, spring onions and mustard powder, leaving a 2 cm border along one long edge.

  5. Roll up tightly from the opposite long edge and cut into 12 slices with a serrated knife. Set them cut side up on a lined tray, close together.

  6. Cover and prove for 30 minutes, until puffy.

  7. Heat the oven to 200°C / 400°F, brush the rolls with the egg and bake 18 to 20 minutes, until golden and the cheese bubbles.

  8. Cool 5 minutes and serve warm.
