-
Toss the chicken with 1 tbsp of the oil, the lime juice, chipotle, cumin, oregano, garlic and salt, and marinate for 20 minutes.
-
Cook the rice according to the packet, then stir in half of the coriander and a squeeze of lime juice and keep it warm.
-
Heat the remaining oil in a large frying pan over medium-high heat and cook the chicken for 6 minutes on each side, until charred and cooked through to 74°C / 165°F. Rest for 5 minutes and slice.
-
Warm the black beans in a small pan with the cumin and a splash of water for 4 minutes.
-
Mix the sweetcorn, tomatoes, red onion, jalapeño, most of the lime juice and the remaining coriander for the salsa.
-
Mash the avocados with a pinch of salt and the last of the lime juice.
-
Divide the rice between four bowls and top with chicken, beans, salsa, guacamole, lettuce and cheese, and finish with sour cream.
Tips for Making Chicken Burrito Bowl
- Keep the components separate in the bowl. Each one is best against the others, and mixed together they lose their contrast.
- Do not marinate for hours. The acid in lime juice turns chicken firm and chalky if it sits too long, and 20 minutes is plenty.
- Squeeze lime over the avocado. It keeps the guacamole green, and it brightens everything in the bowl.
Common Substitutions & Variations
- Lemon is the everyday swap for lime in this kind of dish — the acidity plays the same role even though the flavour is not identical.
- An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
- Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
What to Serve with Chicken Burrito Bowl
